Omelet with the sfrizzoli

  Ingredients for 6 people: The sfrizzoli are the residues of the fat of pig that is turned into lard, but is difficult to find them in commerce, therefore they can be replaced with the bacon. In a frying pan with the lard (or the oil) put the sfrizzoli. Then pour the eggs beaten with the pecorino, some parsley, salt and pepper and cook well from both the parts.  
  6 eggs  
150 gs. of sfrizzoli
1 spoon of lard (or oil)
50 gs. grated pecorino
parsley
  pepper and salt
